Bánh mì fillings, from classic to modern

The classic bánh mì filling is a mix of pâté, a buttery mayonnaise spread, Vietnamese cold cuts, pickled carrot and daikon, cucumber, cilantro and chili, all in a light, crackly baguette. From that base, the filling can be almost anything: grilled pork, chicken, fried egg, meatballs, tofu or modern fusion options.

The trick is not the protein. It is the balance of rich, fresh, sour, crunchy and spicy in every bite.

The formula behind every good bánh mì

Think in layers. A good sandwich usually has:

  • A spread: pâté, mayonnaise-butter or both.
  • A main filling: meat, egg, tofu or fish cake.
  • Something pickled: đồ chua (carrot and daikon).
  • Something fresh: cucumber spears and cilantro sprigs.
  • Heat: sliced fresh chili or chili sauce.
  • Seasoning: a few drops of Maggi seasoning or soy sauce.

Once you know this structure, you can build your own version with whatever is in the fridge.

The classic: bánh mì đặc biệt

Đặc biệt ("dahk bee-et") means "special," and in a bánh mì shop it usually means the combination with everything. Typical components include:

  • Pâté, often a pork or chicken liver pâté, spread thinly.
  • Bơ, which here means a homemade mayonnaise-like butter spread rather than avocado.
  • Chả lụa, a smooth, steamed Vietnamese pork sausage, sliced.
  • Thịt nguội, assorted cold cuts, such as cured or roasted pork.
  • Đồ chua, cucumber, cilantro and chili to finish.

The exact cold cuts vary from shop to shop. That variety is part of the fun.

Popular single-filling bánh mì

  • Bánh mì thịt nướng: grilled pork, often marinated with lemongrass, garlic and fish sauce.
  • Bánh mì gà: shredded or grilled chicken.
  • Bánh mì xíu mại: soft pork meatballs in tomato sauce, sometimes served with the sauce for dipping.
  • Bánh mì trứng: fried eggs, sometimes with a splash of soy or Maggi. A quick breakfast favorite.
  • Bánh mì heo quay: roast pork with crispy skin.
  • Bánh mì chả cá: fried fish cake.
  • Bánh mì chay: a vegetarian version, commonly with tofu or mock meat.

Modern and fusion fillings

Outside Vietnam especially, bánh mì has become a template for creative fillings. Common modern takes include:

  • Lemongrass tofu or tempeh
  • Pulled pork or brisket
  • Korean-style fried chicken
  • Kimchi in place of or alongside đồ chua
  • Sriracha mayo instead of the traditional butter spread

Some people love these; others prefer the classics. The structure still applies: if a filling is rich, the pickles and herbs keep it balanced.

A simple filling to start with: lemongrass grilled pork

This makes enough for four sandwiches.

Ingredients

  • 1 lb (450 g) pork shoulder or boneless pork chops, thinly sliced
  • 2 stalks lemongrass, tender inner part finely minced
  • 3 cloves garlic, minced
  • 1 1/2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1 tablespoon neutral oil
  • 1/2 teaspoon black pepper

Steps

  1. Mix the lemongrass, garlic, fish sauce, sugar, oil and pepper in a bowl.
  2. Add the pork and coat it well. Marinate for at least 30 minutes, or up to overnight in the fridge.
  3. Cook in a hot skillet or grill pan in a single layer for about 2 to 3 minutes per side, until caramelized at the edges and cooked through.
  4. Rest for a couple of minutes, then tuck into warm baguettes with your spreads, pickles, cucumber, cilantro and chili.

How do you keep a bánh mì from getting soggy?

  • Warm the bread briefly in the oven so the crust is crisp.
  • Spread pâté or butter first; it acts as a barrier against wet fillings.
  • Drain pickles well before adding them.
  • Assemble just before eating. Bánh mì is at its best within minutes.

The bread matters a lot. See why bánh mì bread is so light and crisp for what to look for, and đồ chua, the pickled carrot and daikon to make the essential pickles.

Allergen notes

Bánh mì commonly contains gluten (the bread), eggs (mayonnaise-style spreads), fish sauce in marinades and sometimes soy from Maggi or soy sauce. Pâté is typically made with liver. Some shops add peanuts or shrimp-based ingredients in specific fillings, so ask if you have an allergy.

For the full overview of the sandwich itself, start with what bánh mì is.

Start with one classic filling and the full set of pickles and herbs; once that balance tastes right, swap the protein and keep everything else the same.
